all-purpose flour for dredging

Anything special you use? Beef, lamb, Chicken? I make a French “Bourguignon” style w/ wine as my liquid base, a Cajun one w/red beans and rice (beef instead of pork of course) and I’m thinking of toying with a lamb and lentil one
i want something that is nice, fresh and very simple.
Nothing else with garlic in please, so no garlic mash or anything. Something that will look nice and complement the dish. Thanks.
