Deglazing wine? I used a nice dry chablis, but is this the best type to use? anyone think sauvignon blanc, or sherry is better?

I need to substitute the usual rum or brandy with one of following, which would suit the best – port, marsala, grand marnier, red wine, white wine, dry sherry.
